INTRODUCTION
Eric: Hi everyone, and welcome back to HindiPod101.com. This is Intermediate Season 1 Lesson 19 - Asking About the Menu in an Indian Restaurant. Eric Here.
Udita: नमस्तेNamaSTe I'm Udita.
Eric: In this lesson, you’ll learn how to speak about different types of food. The conversation takes place at a restaurant.
Udita: It's between Karan and and a member of the staff.
Eric: The speakers are strangers in a customer service context, so they’ll speak polite Hindi. Okay, let's listen to the conversation.
DIALOGUE
करन : भैय्या , हमने अभी जो आर्डर किया था उसके बारे में पूछना है।
स्टाफ़: जी कहिए।
करन : एक चीज़ पता करनी है - हम ने जो थाली मंगवायी हैं, क्या उसके किसी भी खाने में टमाटर का उपयोग होता है?
स्टाफ़: एक मिनट - आपकी थाली में पूरी, बाजरे की रोटी और सादा चावल है, और दाल बाटी चूरमा, गट्टे की सब्ज़ी, पंचमेला दाल, बंध की कढ़ी, अमरस की कढ़ी, पापड़ की सब्ज़ी, केर सांगरी है।
स्टाफ़: साथ में लाल मांस और सफ़ेद मांस है। नहीं इन में टमाटर तो नहीं है लेकिन खट्टा ज़रूर है। केर सांगरी में खासकर आमचूर का उपयोग होता है और कई चीज़ों में दही होगी।

Eric: Listen to the conversation with the English translation
Karan: Excuse me, I have a question about what we just ordered.
Staff: Yes, please go ahead.
Karan: I want to find out one thing—in all the items in our assorted plate, that we have ordered...are tomatoes used in anything at all?
Staff: Just a minute—your assorted plate has fried bread, millet bread, plain white rice, and lentils with wheat rolls, gram flour rolls and vegetable curry, mixed five lentils, gram flour fritters in gravy, unripe mango curry, poppadum curry, and spicy berry beans.
Staff: There is also spicy red meat curry, and white meat curry. No these don't use tomatoes, but there are other sour ingredients. Especially in the spicy berry beans, dried mango powder is used, and yogurt is used in some of the dishes.
Staff: Are you unable to eat sour foods?
Karan: No sour foods are okay—it's only tomatoes that are not allowed for me.
Staff: All right.
Karan: One more thing—we had ordered deep-fried gram crispies, which haven't arrived yet and we've been waiting for a while.
Staff: Yes sir, it'll be here shortly. A large volume of customers arrived at the same time as you, and we are just getting through all the orders one by one. Yours must be almost ready, and will be served very soon.
Karan: Please ask them to hurry. It's okay for the main dishes, but we would really like the starters early at least.
POST CONVERSATION BANTER
Eric: For this lesson’s dialogue we were in a restaurant and Karan ordered something with many delicious dishes.
Udita: Yeah, it did sound good! Rajasthani cuisine is a favorite of mine.
Eric: What is that?
Udita: Rajasthan is a desert state in western India. As the climate is so dry and arid, the cuisine reflects that.
Eric: Oh, so are there less dishes with gravy, which are made using water or green vegetables?
Udita: That’s right. Instead the food uses a lot of milk and milk products.
Eric: Are there any other special features of Rajasthani cuisine?
Udita: Rajasthan is the land of nomadic tribes, so the food is made to last for many days so that it doesn’t need reheating.
Eric: Perfect for traveling across the desert. Are there still curries?
Udita: Yes, many! They have a creamy texture due to more milk, cream, and yoghurt being used as a base but they are still very spicy.
Eric: And how about the desserts? That’s always my favorite part of a meal.
Udita: Sweets are served with the main meal, instead of afterwards.
Eric: I like that idea! Okay, now onto the vocab.

Eric: Let's have a closer look at the usage of some of the words and phrases from this lesson. The first word is..
Udita: थाली Thaalii
Eric: meaning "plate,” and also “a specific style of eating with many dishes served in one round plate"
Eric: What can you tell us about this?
Udita: थाली THaaLii is a noun that describes something unique to South Asia. It is the round, flat plates that food is served on. It is also refers to a meal where many curries and dry dishes are served in little bowls surrounding the rice, roti and breads, on a large flat plate or dish.
Eric: That sounds like a lot of food.
Udita: There are usually 4 or 5 different dishes served in small portions alongside the main food item. So the थालीThaalii is the full meal with many items, served together on one large plate.
Eric: You can see this style of meal in other places, such as Bengal, Tamil Nadu, and so on, but they’re served on banana leaves and not a plate or dish.
Udita: so they are not called थालीTHaaLii.
Eric: Okay. Can you give us an example using this word?
Udita: Sure. For example, you can say.. हम खाना थाली में परोसते हैं। ham khaaNaa THaalii mein paroSTe hain.
Eric: ..which means "We serve the food on a large plate." Okay, what's the next word?
Udita: सादा SaaDaa
Eric: meaning "plain, unflavored, simple"
Eric: What can you tell us about this?
Udita:सादा SaaDaa is an adjective in the plain masculine form that means “plain” and “simple”.
Eric: What are the other forms?
Udita:सादी SaaDii is feminine and सादे SaaDe is plural.
Eric: How do we use this word?
Udita: You can use it both in a positive and negative way, depending on whether you want to imply simplicity as good or boring.
Eric: Can you give us an example using this word?
Udita: Sure. For example, you can say.. पेट खराब होने के कारण इमरान सिर्फ सादा खाना खा रहा है। pet kharaab hoNe ke kaaran imraaN Sirf SaaDaa khaaNaa khaa rahaa hai.
Eric: .. which means "Because of an upset stomach, Imran is eating only plain food." Okay, what's the next word?
Udita: सब्ज़ी Sabzii
Eric: meaning "vegetables, also any purely vegetarian dish"
Eric: What can you tell us about this?
Udita: The word सब्ज़ी Sabzii has two meanings. The first is “vegetables”, but it is also used to refer to dishes that are made only of vegetables.
Eric: So it’s also a general term that covers different dishes?
Udita: Yes, but they all share the common point of not having any meat or egg and don’t have much sauce or gravy.
Eric: Is there anything else you can tell us about these dishes?
Udita: The dishes are usually called “[Something] की सब्ज़ी kii Sabzii”, with ‘something’ being the name of the main vegetable being used.
Eric: What’s an example using this word?
Udita: You can say.. आज खाने में दाल और चावल के साथ गाजर की सब्ज़ी है। aaj khaaNe mein Daal aur caaval ke SaaTH gaajar kii Sabzii hai.
Eric: .. which means "For today's meal we have rice and Daal with a carrot vegetable dish." Okay, now onto the lesson focus.

Lesson focus

Eric: In this lesson, you'll learn how to talk about different types of food.
Eric: We’ve talked about food a lot in this lesson, so let’s talk about it some more! Are you feeling hungry yet, Udita?
Udita: Not yet! I ate तरकारीTarkaarii earlier though.
Eric: What’s that?
Udita: Actually, it refers to a broad range of dishes - basically anything cooked that has vegetables in it. It’s the dishes eaten around the staple rice or bread, and is also called भाजी bhaajii.
Eric: What about rice and bread? How do we talk about those in Hindi?
Udita: There are different types of bread. The most common is रोटी rotii, or चपाती capaaTii. This is made from wheat flour, kneaded with water, rolled flat, toasted and then grilled.
Eric: How do you say “white rice” in Hindi?
Udita: चावल caawaL. Indian rice isn’t sticky, so when it’s eaten it is usually mixed with something that has gravy such as दाल DaaL.
Eric: What is that?
Udita: It’s another dish that accompanies rice and sometimes bread, but it isn’t a curry. It’s made with lentils, beans, or pulses that are steamed in water, salt and often another spice, and tempered after.
Eric: How about sweets and desserts?
Udita: मिठाई mithaaii means “sweets” or “sweet meats” and these are desserts made from cheeses and dairy products.
Eric: Okay. Let’s hear a sample sentence about food.
Udita: आज तरकारी में साग पनीर और करेले की सब्ज़ी बनी है। aaj Tarkaarii mein Saag paNiir aur karele kii Sabzii baNii hai.
Eric: Which means “For today’s meal there is a spinach-cottage cheese dish, and bitter-gourd vegetable dish.” While we’re on the subject of food, Udita, can you tell us some useful adjectives for describing food?
Udita: Sure. How about खट्टा khattaa?
Eric: This means “sour” or “tangy”.
Udita: This is a prominent flavor in Indian cuisine and is often used to describe things such as yoghurt and citrus fruits.
Eric: How do you say “sweet”, for things such as desserts?
Udita: मीठा miithaa.
Eric: Finally, how do you say that something is “spicy” or “hot”?
Udita:तीखा Tiikhaa.
Eric: Can you give us a sentence using “hot”?
Udita:मेरी मौसी को ज़्यादा तीखा खाना पसंद है। merii mauSii ko zyaaDaa Tiikhaa khaaNaa paSaND hai
